Aside from the streamlined features and the American made construction one of the reason we use the American Outdoor Grill in a lot of our built in custom outdoor kitchens is the depth. All the AOG built-in gas grill models have a narrow depth for the built in cut-out. We are able to build the counter tops at two feet deep which saves the customer money on the outdoor kitchen because pricing is made from square footage. The cooking grates for the grill models are the same on each grill but sold in sets based on the width.

Heat shields are designed to spread heat rising and deflect grease as grease, marinades, rubs and sauces drip from cooking. These heat shields are wavy and very thick so they are able to do the job of typical heat shields but they are heavy enough to transfer radiant heat also. As vaporizer plates the grease is made to hit the hot stainless and vaporize to add flavor to the convectional heat under the hood.
When the infrared burners are exchanged for the U burner the heat shields are removed because the infrared burner creates direct heat directed at the grilling surface. We do not need to close the hood of the barbecue to create enough heat to cook with infrared burners. The heat tray vaporizer and burner should be held to have the ability to switch the infrared burners back and forth as needed. However, it is very rare for someone using infrared burners to want to go back to a blue-flame convection burner.
