Capital BBQ Grill Cast Stainless Five Finger Cooking Grate
The cooking grates have four fingers but I think are called Capital five finger grids because the precursors are still called 4 finger grates. The 5 finger grilling grates are undoubtedly the heaviest and most over-manufactured grill cooking grates on the planet. Concave grates are great for moving greases and sauces away from fatty foods and are perfect for adding heat at high temperatures when searing on the grill. Concave grids use a channel for holding flavor or moving moisture away from the barbecuing area. These cast stainless steel cooking grates are very thick and heavy and designed to last longer than any other cooking grate anywhere.

| Concave grates can be mounted in the grill flat or angled at a pitch. Used flat the grates collect greases and moisture lost from food while cooking. Cast stainless steel gets very hot so the moisture that builds up in the grid is vaporized and adds to the convectional flavor corculating inside the closed hood of the barbecue. The grates can also be installed at a slight pitch which allows the grease and marinades to slide off the cooking grates without dripping past the grates and into the barbecue. With foods like hamburgers and rib-eye steaks this is very useful because dripping grease is flammable and causes flare ups that cause inconsistent cooking. After Capital changed the depth to 19.5 inches these grates are not stable in a convex position. The ccut-out in the grid is designed to hold the cooking grates in place. They can be used without it but they have the ability to wiggle around. |
| This image shows the concave grate with the holes in it. These holes can be used to leave the grid at an angle by notching them from the back of the Capital barbecue. The same holes become drainage holes when laid flat and reversed so they are at the front of the grill. This way fatty foods or sauces and grease will be able to be easily removed from the cooking area so there are less flare ups that over heat the food. The cast stainless grates invented for DCS have been copied by companies like Alfresco, Solaire, OCI and BroilKing and all use the design to great cooking use and flavor. Only the Capital is still extrordinary thick and heavy cast stainless and designed for maximum heat conduction with high-quality stainless steel. |

The original DCS cooking grate was designed by the current owners of Capital grills. These were called the four finger grates and they have a set od brackets in the casting in the back to allow the grates to be laid flat or pitched at an angle in the barbecue.
The close-up view of the cast stainless cooking grates shows the design of the Capital cooking grates has evolved from the older DCS designs. Current DCS finger grates are bigger than the originals but otherwise the same. The Capital grill grids are casted for thick strength and heat conduction but are welded to maintain the quality of the stainless.
Cast stainless steel is not magnetic because iron oxides have been drained to ensure long life outdoors.
