DCS Smoker Drawer

This is the replacement wood smoking drawer for older DCS models. The older madel gas grills by Dynamic Cooking Systems has a spearate handle just like to access doors and drawers. The diamond cut-slice in the handle is the same decorative indicator used on the built in access doors and drawers used at the time.

This DCS smoker drawer is 22 inches deep front to back and the actual wood drawer is 18 inches deep. The smoker tray is 2.5 inches wide and 1.25 inches high. The older model smoker drawer also has a face plate and handle that are removable. This item ships without the face place and the handle so you can keep these items and install them to the front mounting plate on the smoker.

The replacement handle and the face plate are still available but most of the older grills can continue to use the original grill parts. The smoker drawer itself can eventually rust and fall apart if it is not kept dry and clean so this is usually the only item customers require to be able to continue flavoring food with wood smoke on a DCS gas grill

Although DCS was best known for unheard-of high quality grill parts and higher temperature than any other grills of their time the DCS barbecue models were also very capable of barbecuing at lower temperatures, capable of adding a wood-smoked flavor and even capable of performing a cold smoke.

Smoking BBQ With DCS

While a lot of gas BBQ grills have an ability to add a smoker tray or a smoker drawer and a lot of barbecues also manufacture smoker trays specifically designed to fit into their own grills the DCS models went a step further than these. DCS grill models that had the smoker -- distinguished by an S in the suffix of the model number -- also have a dedicated burner installed just under the smoker tray. The dedicated burner is like a standard pipe burner with a lower heat setting drilled in the orifice so it is only used to heat-uo the wood in the removable drawer.

Soak wet wood chips in water for at least a couple of hours. Most people will allow the wood to soak overnight. Add the sdoaking wet wood chips to the DCS smoking drawer and use the burner to heat the chips until they are smoking. The moisture absorbed in the wood should stop the wood from catching on fire or even charring. Barbecue at a low heat setting with the hood closed so the smoke is trapped inside where the flavor will be absorbed into the food.
