Heat indicators are designed to tell us the internal temperature of the barbcue. When we cook with most barbecues we cook as though broiling with a closed hood and heat slowly building up to cooking temperature. When we grill with heat radiating from briquettes, lava rocks, rods, etc the temperature is usually focused on the area just above the cooking grates and a hood thermometer is only useful as an indication of the internal cooking heat. Actual degrees need to be read at the grilling grids but with experience we can know when we are ready to cook by watching the hood mounted thermometer.

Many barbecue grill models do not have a hood thermometer. This is because a lot of high-end models are designed to be used as a grill. A grill cooks with heat localized at the level of the cooking grates. A broiler (commonly called a gas barbecue) usually allows heat to build up inside a closed hood. When the hood is down and the burners are heating the air circulating inside a closed lid this is called convection cooking because the hot air surrounds the food to cook with hot air. This is how most barbecues cook and most of these models will have a hood thermometer installed.
Appliances designed to cook with heat directed to focus at the layer of the grilling grates are called grills. Many grills focus heat by using infrared burners or using a layer of briquettes to heat and radiate heat from just below the cooking grid. Many appliances designed with the capabilities to grill will also have the ability to cook like a broiler or even a smoker using wiid chips to transfer both heat and flavor. Often a grill will still have a hood thermometer because of this ability to cook in many ways. As a grill a hood thermometer can be misleading because the grilling temperature is too low to be read properly but as a broiler, barbecue or a smoker we can effectively use a properly mounted hood thermometer.
Single post installation on Oval thermometer
This is the same as the thermometer shown above. One of these oval hood thermometers has a single installation post and the other has a center reading post and two side mounting posts with nuts for installing on the hood of any barbecue grill designed this way.
